Rehabbed Fish Tacos

Tanya Zuckerbrot’s Baja Fish Tacos
Taco
- 1/2 cup GG Sprinkles
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 pound cod
- 2 egg whites, beaten
- 8 Romaine leaves, chopped in strips
- 4 single-sized La Tortilla factory wraps (low-fat, low-carb)
- “Light Baja Sauce”
- 1/4 cup Light Mayo
- 1/4 cup Greek Yogurt
- 1/4 teaspoon cayenne pepper
- 1 tablespoon ketchup
- 1 tablespoon fresh lime juice
Directions:
- Preheat oven to 350 F.
- In a shallow dish, combine GG Sprinkles, salt, black pepper and garlic powder. Place egg whites in a separate dish.
- Cut cod into four equal pieces. Dip each piece into beaten egg whites and then coat with GG Sprinkles seasoning mix evenly.
- Spray Pyrex dish with non-stick cooking spray.
- Place seasoned fish into Pyrex dish and put in oven for 12-15 minutes, until lightly browned.
- In a separate bowl, mix all ingredients for Baja Sauce.
- Lay out 4 tortillas and layer lettuce strips, one piece of fish, and 2 tablespoons of Baja Sauce on each.
- Wrap it up and enjoy!

Storing GG in the Summer Months

Summer GG Recipes
The weather is changing, (for the better) and it is time to mix it up in the kitchen! GG Bran Crispbread Sprinkles and Crackers are an excellent addition to your healthy, high fiber summer diet. Dash Sprinkles over a crisp salad or in your favorite fruited yogurt or smoothie.
Try this fast, healthy and delicious lunch of a GG crakers, topped egg salad:
Two hard-boiled eggs
1 tablespoon of low fat or fat-free mayonaise
2 teaspoons of minced yellow onion or shallots
1 teaspoon of minced celery
A dash dried herbs of your choice (parsely, basil oregano, mustard)
In a small bowl, mash the egg thoroughly, then add all of the other ingredients, stirring well with a fork.
Top your GG cracker with the egg salad, then add a dash of paprika on top.
Another fantastic topping to GG that doesn’t require slaving over a hot stove:
2 tablespoons of cottage cheese and a small dollop of your favorite salsa.
Or, sliced avocado sprinkled with cracked red and black pepper.
If you care for something sweeter and an even greater portion of fiber, add some raspberries to your cottage cheese and just a dash of cinnamon.
