Apple-Cranberry Crisp

  • 2 cups of Applesauce
  • 1 cup of dried Cranberries
  • 1 cup Granola
  • ½ a cup of GG Bran Sprinkles
  • 2 teaspoons of Cinnamon
  • 1/8 teaspoon Nutmeg

Pre-heat oven to 350 degrees. Spread your favorite applesauce on the bottom of a 9 by 11 baking dish. Sprinkle the cranberries evenly over the sauce.

In a small mixing bowl, combine 1 cup of your favorite granola and ½ a cup of GG Sprinkles. Spread the mixture evenly over the apple sauce. Sprinkle cinnamon and nutmeg over the top. Bake for 10 to 15 minutes.

Tastes Like Fried Chicken

My wife found this recipe on her new favorite website Skinny and the City (www.skinnyandthecity.com)
If you ever crave items from the kids’ menu when you eat out, mac ‘n cheese, French fries, chicken fingers, I can help you Low Carb Fried ChickenLow Carb Fried Chickenout — at least with the last one. I’ve created my own crispy baked version that will bust up your cravings. I use chicken breast for the recipe, but you can make it with wings just as well. The secret ingredient is an uber-helpful new product: GG Bran Sprinkles. They look like breadcrumbs but are made from bran, which is low in calories and high in fiber. A 3-tablespoon serving contains 5 grams of dietary fiber (20% of recommended daily need) and has just 12 calories. Regular breadcrumbs usually have 80 calories and 0 grams of fiber. So eat up: It’s finger-lickin’ good — and good for you.

Ingredients:

  • 4 6-ounce chicken breasts (or wings)
  • ¾ cup GG Bran Sprinkles 
  • 4 tablespoons low fat mayo*
  • Salt and pepper, to taste
  • ¼ tsp garlic powder, ¼ tsp onion powder, 2 teaspoons sesame seeds (all optional)

Cooking instructions:

  1. Preheat the oven to 375?F.
  2. Brush chicken breasts with low fat mayo to coat. *You can also use mustard or egg whites to coat the chicken if you prefer.
  3. Place bran sprinkles in a bowl.
  4. Mix the salt and pepper with the optional ingredients (garlic powder, onion powder, and sesame seeds) into the bran sprinkles to season them.
  5. Dip the chicken into the bran, covering both sides.
  6. Place chicken on a baking sheet and bake for 30-40 minutes, or until chicken is cooked through and coating looks crispy.

Nutrition content
Per serving (1 6-ounce chicken breast): 240 calories, 6.5 g fat, .5 g of saturated fat, 7.5 g carbohydrate, 5 g fiber, 39 g protein

Herbed White-fish on GG

2 fillets of your favorite white fish (cod, tilapia or flounder work well) seasoned with red and black pepper, sauteed in Pam or a half teaspoon of olive oil

1 tablespoon of lemon or lime juice

red and black pepper, to taste

1/4 of a teaspoon of finely grated parmesan

2 scallions, minced

1/4 cup of your favorite whole tomatoes, sliced very thin

Season, then saute’ each side of the fish until golden brown and the fish is thoroughly cooked.

Place the fish in a bowl and let it cool.  Gently mash the fish with a fork, and add a little more pepper to your fish.  You may add a sprinkling of your favorite herbs, such as tarragon, fresh or dried basil or oregano.

Add the scallions and the lemon juice and gently combine the ingredients with a rubber spatula or a large spoon.

Top a GG Scandinavian Bran Crispbread cracker with your thinly sliced tomato.  Sprinkle the tomato with some of the grated parmesan. Spoon about a tablespoon’s worth of the sauteed fish combination onto a GG cracker.

You can even place the topped cracker in the oven for a few minutes, to warm the fish up again and melt the parmesan.  I do recommend brushing the tomato with a little olive oil beforehand, to keep it from getting too dry in the heating process.

Serve!!!!

This is a fantastic healthy appetizer to serve to your guests, or for you to snack on as well.

Joanne’s Turkey Temptation Loaf

4 tbsp. low-sodium teriyaki sauce
1 egg
3 tbsp. tomato paste
2 packets of Splenda or Equal
1 teaspoon Italian herbs
½ teaspoon garlic salt
¼ cup GG Fiber Sprinkles
1 pound of ground turkey meat
½ cup shredded low-fat mozzarella cheese
1 tablespoon of GG Sprinkles

Combine the teriyaki sauce, egg, and tomato paste thoroughly. Mix in the turkey meat, and then thoroughly combine the artificial sweetener, Italian herbs, garlic sauce, and Sprinkles into the turkey mixture. If you prefer a more “tomato-ey” flavor, add one-half to one additional tablespoon of tomato paste.

Use a non-fat spray on a loaf pan, smooth in the turkey mixture, and bake at 350 degrees for 45 minutes to an hour, or until the center of the loaf is fully cooked. Sprinkle the remaining tablespoon of GG Sprinkles and shredded cheese over the loaf, and return to the oven until the cheese is melted and bubbly. Enjoy!
