High Fiber Salmon Patties

- 4 GG Bran Crispbread Crackers (or equal amount GG Fiber Sprinkles)
- 1 Can of Salmon (Undrained)
- 1 Egg
- 1 tsp. Old Bay or other Seasoning Mix (optional)
- 2 Tbs. Olive Oil

In a medium mixing bowl, begin breaking crackers into small bits by hand. (think loosely crumbled cracker consistency) Add salmon contents and break fish apart with a fork. Some people prefer to remove the bones, but they are perfectly edible and a good source of calcium. Mix egg and seasonings in with the mixture. Form into 5 to 7 patties. More water can be added to mixture if it’s too dry to keep its shape. Heat olive oil on medium-high heat and cook patties until browned on both sides.

Uses for salmon patties are limitless. Serve in a sandwich, on a salad, or over rice. Patties store well and reheat well for packed lunches. You family or guests will never guess at how simple these are to make or how good they are for you!

3 or 4 slices of GG Brancrispbread
1 oz. of fat-free mozzarella
fat-free tomato sauce
mushrooms
garlic
oregano

Spray a cookie sheet with Pam (or equal non stick coating). Top 3 or 4 GG slices with 1 oz. of fat-free mozzarella, fat-free tomato sauce, mushrooms, garlic and oregano. Bake until cheese melts.

Dark Chocolate-banana Sprinkle Smoothie Recipe

1 cup of filtered water
2 tablespoons of protein powder
¼ cup nonfat yogurt
1 banana, sliced
3 tablespoons of crushed GG Crackers or GG Bran Sprinkles
1 tablespoon of ground dark chocolate
3 tbsp. almond or soy milk
3 tsp. ground almonds

Put all ingredients into the blender in the order with which they are listed. Run blender about 20 to 30 seconds, until smooth.

Pumpkin Sprinkle Muffins Recipe

¼ cup of crushed GG Crackers or GG Bran Sprinkles
½ cup rolled oats
1 ¼ cup whole wheat flour
1 tbsp. baking powder
1 tsp. allspice
¼ tsp. salt
2 tbsp. flax meal
1/t tsp. cinnamon
1 tiny dash of ground nutmeg
1 ¼ cup of brown sugar
1 ¼ cup of canned pumpkin
6 tbsp. canola oil
4 egg whites
¼ cup of ground almonds

Preheat oven to 350. Prepare a 12 cup muffin tray with muffin liners and lightly spray with nonfat cooking spray. In a large bowl, combine flour, baking powder, allspice, cinnamon, salt, flax, oats, and Sprinkle. Using a mixing bowl, mix brown sugar, pumpkin, canola oil, and egg whites. Stir in dry mixture. Fold in almonds. Fill muffin cups ¾ full and bake for 18-22 minutes, until muffins are lightly brown. Place tray on cooling rack for 10 minutes before removing muffins from pan. Makes 12 muffins.

GG Bran Crusted Salmon Recipe

4 salmon filets
Pepper to taste
Cracked red pepper
3 tsp. Dried tarragon
2 tbsp. Dijon mustard
1 tsp. balsamic vinegar
3 tsp. honey
½ a cup of crushed GG Crackers or GG Sprinkles
¼ cup grated parmesan
3 tbsp. plain yogurt
1 egg white

Rinse the salmon in cold water and pat dry with a paper towel and cover with plastic wrap, setting aside in fridge. In a medium sized mixing bowl, add all wet ingredients and the herbs, briefly whisking until blended. Add the salmon to the mixing bowl and coat all of the pieces thoroughly with the mixture. Cover the bowl and chill at least 2 hours. Ideally, the salmon should be chilled in the mixture 4 hours or more.

Once chilled, take the pieces out of the bowl. In a small bowl stir the parmesan and crushed GG crackers or Sprinkles. Spread the dry mixture onto a plate evenly. Roll the salmon in the in the Sprinkle’s mixture until well crusted.

In a large skillet, heat 2 tbsp. of sunflower oil on medium heat. Add the crusted salmon filets and sauté ONCE on each side until the crust is crisp. Flip the salmon filets over carefully with a spatula. Place the filets onto a cookie sheet. Bake the filets in the oven at 350 degrees for 20 to 30 minutes, or until completely cooked.
