Brancrisp Egg Bake

8 brancrisp crackers laid on the bottom of pam-sprayed pan
8 brancrisp crackers broken into small pieces
Vegetables of choice – I like broccoli, peppers, onions, asparagus, etc.  sautéed until tender
1/3 bottle Walden Farms Scampi sauce
2 T Dijon mustard (or more to taste)
4 eggs + 12 egg whites (I use the pure egg whites in the carton & they work fine)
2 C water
½ t salt
½ t pepper
¼ t nutmeg

Put 8 Brancrisp crackers on bottom of pan.  Warm scampi sauce and add Dijon mustard – mix well.  Pour half over brancrisp.  Sautee vegetables until tender.  Spread mixture  onto brancrisp.  Spread crumbled brancrisp over top.
Combine eggs, water and all seasonings, and mix well.  Pour over the casserole, and bake at 325 for 30-45 minutes, or until baked thoroughly and slightly browned.
Makes 4 HCG servings; I cut in smaller pieces and make it 6 servings, but then is not a complete protein HCG serving.
