Eggs and Guacamole on Crisps
• 2 Eggs
• 2 tablespoons non-hydrogenated coconut oil (or butter)
• Cracked pepper
• Chicken bouillon crumbles
• Shredded Cheese “your favorite”
It’s a simple, easy egg and guacamole recipe that tastes amazing and is a great way to start your day (or evening!) 1). Buy two avocados. Slice the two avocados lengthwise and remove the pits and the peel with a spoon. 2). Mash the avocados in a bowl with your favorite guacamole seasoning packet. Mix well, and refrigerate for at least 30 minutes (if desired). 3). Put one to two tablespoons of cold-pressed, non-hydrogenated coconut oil (or butter) in a frying pan. Try to get organic coconut oil if you can! 4). Crack one egg (or however many you want to eat) and cook the egg over-medium style. You want the yolk to be slightly solid, but still have some liquid. You can add sea-salt, cracked pepper, chicken bouillon crumbles, and turmeric to taste while cooking your eggs. 5). Take a few GG Bran Crispbread slices and smear some guacamole over one entire side of each piece of Crispbread. Don’t be afraid to layer it on thick! 6). Before removing the eggs from the pan, sprinkle a small amount of your favorite shredded cheese onto the egg and allow the cheese to slightly melt. 7). Slide the over-medium eggs onto the guacamole side of the Crispbreads. There should be one egg per Crispbread. THAT’S IT! I eat these all the time, and they are an amazing, healthy treat. This meal includes amazing nutritional benefits from the egg yolk and avocados, medium-chain triglycerides from the coconut oil for energy, and plenty of fiber for your diet. It’s a tasty, nutritious powerhouse!
