Indian Eggplant GG Crisp
• GG Bran Crispbread
• Eggplant: peeled and sliced into 1/2″ rounds, salted
• 1 cup Greek Yogurt
• 1 tsp Madras Curry Powder Sriracha
• Salt to taste
Lay out eggplant slices onto greased pan under broiler until soft (5-15 minutes depending on distance to heat source). Mix madras powder and yogurt and sriracha and salt to taste. Pile on dollop of yogurt mixture and lay broiled eggplant slice (cut to fit crispbread).
Also, you can throw the yogurt mixture and eggplant slides into food processor for a gorgeous, simple spread.
Prep Time – 15 minutes
